If you’ve ever done a low carb diet, then you know the craving for something crunchy can get fierce! That’s why I’m in love with the EASY and CRUNCHY pizza crust!
It’s so simple, it’s 1 ingredient, cheese! All you need is a good non-stick skillet, my choice is ceramic, and shredded cheese. Use as little or as much cheese as you need, depending on how big of a pizza you want.
I used a 12″ pan, and for this pizza I used about 1 1/2 cups of shredded mozzarella. Spread the cheese out in a circular shape, turn the pan on over medium heat and let the cheese start to sizzle. It will get very bubbly and you will begin to see the other, done side, showing through. This is when its time to flip, just like you would a pancake!
Let it do its thing on the other side, when you remove from pan, blot with a paper towel to remove excess grease, and let it cool. I used a cookie cooling rack, it will begin to harden up and get crunchy as it cools.
After cooled, I put my pizza sauce, more cheese, and pepperoni on top and put in the microwave for about 1 min to melt, then I gave it another minute to cool, then I used kitchen scissors to cut into slices, much easier than trying to use a knife on it.
This little pizza crust trick has been a great go to when I need crunch! Even my 8 year old son loves it! He has no idea it’s different than any thin crust pizza!
